Somewhere Over The Rainbow.. Cake!!




This is my favourite cake to make and eat, i really don't need to explain why, it does all the talking for itself.

Recipe

To start, weigh your eggs. Crack them into a bowl and weigh them, giving you a measurement to use for the rest of your recipe. I used 7 eggs, which weighed 360g.

7 eggs (approx 360g)
360g self raising flour
360g Stork
360g caster sugar
2tsp baking powder
½ tsp vanilla extract
6 Sugarflair gel food colours -red, orange, yellow, blue, green and purple
(orange can be made from yellow and red, purple can be made from red and blue)

600g icing sugar
300g butter
½ tsp vanilla extract


Method

Preheat oven to 180C/fan 160C/gas 4

Using an electric hand whisk or mixer, cream together the Stork and sugar until pale and fluffy and add a splash of vanilla.

Sift the flour with the baking powder into a bowl.

Add the eggs in 3 lots to the mixer, alternate adding the eggs with 4tbsps of flour.

On a very low speed, add the rest of the flour and mix slowly until incorporated.

Divide the mixture equally between 6 bowls and colour each mixture using the gel colours. 


Spoon into prepared sandwich tins and level the top. If you only have 2 tins, bake in 3 lots.

Bake for 10 minutes, skewer test the cake to make sure it is completely cooked.
  


Gently turn out on a cooling rack and allow to cool completely.



Make up a large batch of butter icing by mixing the butter on a high speed until pale and fluffy, then cream in the icing sugar and add vanilla to taste.

Level each cake layer with a knife, making sure they're all flat and a similar height.

Layer up your cake, starting with the purple layer and cover the top with a layer of butter cream, followed by the blue, green, yellow, orange and then the red layer for the top, all sandwiched with a layer of butter cream.

Using a pallet knife, apply a crumb coat by covering the whole cake in a thin layer of butter cream and refrigerate for 30 mins. This will stop any crumbs from showing through the final covering.

Once set, cover the cake with the rest of the butter cream and decorate.

New Boots

Friday night was a sad night..picture the scene:
I got home after a busy day, schlomped back on my bed so glad to be home, forced myself to sit up to take my boots off..reached for the zip and OUCH! 
The poxy zip had broken and a pokey outy metal bit cut my thumb!

(Cue sad music)
I've had my beloved boots for 2 years, I remember the day when I saw them in the Schuh sale, the last pair on the shelf..in my size! YESS! They looked so smart new, and once I’d worn them in a little, they looked and felt great. I've worn them to death..literally. So now they face the big shoe box in the sky. 
On a more serious note, because shoe shopping is serious business..I needed new boots. I totted off to the shops today and feeling very downhearted, I nearly came away with no boots :( 

I was all ready to give up and go home, I cut through New Look shoe department just incase a magic pair of boots had appeared in the 30 mins I’d not been in there. And there they were! Boots I hadn’t seen! There was only one pair in a size 3..I’m a 6 so I knew I wasn't going to fit in them. I asked a girl working there if they had any more and she showed me over to the teen section. 

Being a curvy girl, I grew out of the teen section aged 14 so it's not an area I’m familiar with, but in front of me stood a big wall of shoes that go up to a size 6 and even better VAT free! I found my boots, skipped around in them for a minute or two, walking from one side of the area to the other..the walk you're so embarrassed by when you're 6 and your mum takes you to Clarks for school shoes, but as an adult, you realise is actually a good way to test your shoes..

I am now the proud owner of a lovely new pair of boots :)

What I spent my Daxon 350 voucher on

A few months ago, Daxon offered bloggers who joined their VIP network a £50 Amazon voucher in exchange for an advertising post on your blog. I was a little sceptical, but I had my eye on something so I thought why not :) You can see my post here

Well, I recieved my voucher as promised and after a should I, shouldnt I? moment, I just couldn't stop myself from clicking BUY ME NOW!

It wasn't until after I'd gone through the check out that I realised the item was out of stock, so I had to wait 2 weeks for it to come back. But I'm so happy :D

So what did I buy?

A glass bowl for my Kitchenaid <3 span="">


I was such a lucky girl to recieve a Raspberry Ice Kitchenaid for Christmas from my wonderful boyfriend (he actually let me have it in November because I had lots of Christmas cooking to do so got to test it out propperly). While browsing to see what colour I wanted, Images kept popping up from American websites offering the glass bowl as standard, rather than the stainless steel one that's offered in the UK. To say i was well jell would be an understatemnet but at £61 I just couldn't justify it to myself..yet..and I whipped up a baking storm for a few months quite happy with my metal bowl it comes with.
Until Daxon gave me £50.
I can justify £11 for a glass bowl. OH YES. 

So 2 weeks passed and it arrived on my doorstep after work one day, YAY!
I quickly gave it a wash, clipped it in place and whipped up some cupcakes to take to work the next day. I'm so pleased with the bowl, it's very heavy and sturdy, looks beautiful clipped into my mixer and is a tad bigger than the metal bowl so can hold a little more.


The glass bowl has turned my beautiful pink beast from wonderful to amazing :)



Having 2 bowl is really handy too, I can make a cake mix in one and then whip up some buttercream in the other without having to wash one out to re use it. It does mean more washing up at the end though. That's what boyfriend are for ;)

Did anyone else get a Daxon voucher? I'd love to see what it was spent on.
